Leftovers from a fancy recipe are always tough to use, and usually just end up spoiling if their not ingredients from your normal routine. So when I had leftover quinoa mix and a bunch of extra mushrooms from my stuffed squash, I thought hmm what now. Stuffed mushrooms!!!
Now this was simple and quick so I’m not gonna gussy it up with too much talk.
Pull the bottoms out of those shrooms
Drizzle with olive oil, I used garlic flavored. And pile on the filling, don’t worry bout making it perfect.
Then roast at 375 until they start talking.
Finish with a little cheese, and take the picture before you finish all of them. So yummy!
No more leftovers! Just a full tummy! ~ M
